  3. Super asian poached salmon.
    Now that fresh Alaskan salmon is running I love to improvise creative healthy dished with it. Tonight I mad a poached salmon in a Thai style that was just fantastic. Start with a pound of very fresh Alaskan king salmon. Season with salt and pepper and saute on both sides in a hot skillet. When the salmon has a nice crust on bith sides, add 1TB chopped ginger; 1 tb minced garlic; 1 bunch disced scallions; 3 chpped canned tomatoes and saute until the aromas come out of the pan. Add 2 cups good chickem stack; 1 tsp Sambal Olek; a bunch of this asperagus and 3 baby bok choy to the pan. Add a pinch of sale and cover and poach on low for 20 minutes until the fish is cooked through. Remove the salmon and keep warm while you reduce the sauce a bit. Serve in bowls with fish at the bottom covered by vegetables and toped with sauce and a sprig of cilantro and a squeeze of lime juice. Enjoy with a un-oaked Chardonnay or Crisp floral Viognier.
